When an induction hob is turned on, an electric current runs through the coil, generating a fluctuating magnetic field. Once a compatible pan is placed on the hob, the magnetic field induces many smaller electric currents in the pan’s metal. This energy is converted to heat, so the heat comes from the pan not the hob.
Consequently, induction hobs can be more efficient, heating a pan of water in almost half the time of a gas stove. It is also likely you will get less hot spots in your pan compared to a convention hob where food gets scorched because it has more contact with the heat source below. Once you remove the pan, an induction hob cools off faster as it was only hot from contact with the pan.
Generally speaking, cast iron and 18/10 stainless steel cookware will work with induction hobs. Most modern pans have an encapsulated base attached, with both an aluminium core for efficient and effective heat distribution, and a ferrous (magnetic) plate to make them induction compatible. Rule of thumb, if a magnet sticks to it, you’re good to go.
