Extract your Jerky easily and lay onto a tray for drying in the oven on a very low temperature – alternatively a Food Dryer or Dehydrator is the gadget to use for more consistent and precise results.
After curing your Jerky and then drying it very slowly – all of the moisture is removed which prevents the growth of bacteria. This gives the Jerky that you have made a long shelf life, especially if you vacuum seal them, but it also dramatically enhances the flavour. You have got to try it – it can also be used to make chorizos and Salamis in a similar method .
