This is because cooking a pizza requires consistent, high temperatures in excess of 400 degrees Celsius both above and below the pizza. Opening and closing the lid of a traditional barbecue creates massive temperature variations that prevent a pizza from cooking properly. The KettlePizza conversion kit solves this problem. It consists of a stainless steel sleeve that slots between the bottom of your kettle barbecue and the lid to create a cooking chamber. With the kit in place, heat rises from the back of the barbecue and passes over the top before exiting out the front. The open chamber allows the temperature inside the barbecue to remain stable throughout the cooking cycle. This means that your pizza cooks from the top and bottom at the same time, resulting in a crisp base, juicy, melted cheese, and beautifully cooked toppings.
