Raclette, a warm dish created by melting cheese and serving it with a variety of foods, is also the name of a popular Swiss cheese made from unpasteurized cow's milk. Semi-soft and salted, Raclette is pale yellow, with small holes throughout and a brownish orange rind. Typically about 11” in diameter and 3” thick, weighing between 13 and 17 pounds, the cheese is normally aged about 3 or 4 months. When heated, it has a creamy consistency, its balanced fat content and moisture allow it to melt evenly without separating or becoming oily.
The dish of Raclette (derived from the French word “racler”, which means “to scrape”) was originally called Bratchäs, Swiss-German for “roasted cheese” and was cooked with an open flame. Melted cheese would be scraped from a block of cheese, then placed over or near vegetables and served with pickles and bread. It dates back more than 700 years. Over the years, the once vegetarian dish, has derived to include many kinds of meat, fish and poultry too.
